Waken Gida

                                                                              

Preparation:
Waken gida takes a long time to cook so to avoid that, soak the beans in water some hours before you’re ready to start cooking.

Place beans on fire and add a lot of water. Allow to cook till it’s soft. 

Wash your sesame seeds and air it till it is very dry. 

Toast sesame seeds in a pan for 5 minutes. 

Wash your dried fish in salted water and set aside. 

When your beans is cooked, you can put it aside to strain and fry the rest of your ingredients in palm oil. 

Add some water after frying then pour your beans in it and allow to cook for 5 more minutes to absorb the stock. 

While the beans is cooking, grind your sesame seeds. 

After 5 minutes, you can put your sesame seeds into the beans; it soaks up some of the oil and also thickens the meal. 

Let it stay on fire for a minute, then it is ready to be served. 

Waken Gida is widely eaten among the Southern Kaduna people and prepared in the exact manner outlined above

Coconut Rice and Kidney Sauce

Coconut Rice Preparation
Break your coconut, wash and grate it then add some hot water to it. (you can also pound it if you do not have a grater). 

Parboil your rice. 

Sieve the coconut to separate the milk from the chaff the put the milk on fire, add your parboiled rice and seasoning to it, followed by your onions then cover and allow to boil. 

If you choose to eat it with Kidney sauce like we did...

Kidney Sauce Preparation
Cook your kidney and dice it

Blend your pepper

Place your pan of oil on fire for the kidney sauce. When the oil is hot, put in your fresh pepper and tomato paste, add some onions, season it and then pour in your kidney and stir.

Allow to fry. 

Add your spring onions and leave for another 3 minutes, your kidney sauce should be ready after 3 minutes. 

Serve with your coconut rice and enjoy your meal.
